Village Style Chicken Curry/ Kodi Koora/ Madhavi's Chicken Curry/ Bachelor's Chicken Curry/ Country Side Chicken Curry

 


As the weather started behaving like a chameleon, our Church member, Madhavi had to stay back with us on a Sunday after the service, as she had to travel back 80 kms to her remote village. I remembered about her talking how well she cooked mutton and chicken curry. So, I asked her if she would do it and she happily agreed to my request. The first time in our kitchen, she cooked mutton curry and gave a whole saga about village-style cooking. It turned out well and lip-smacking. I immediately thought about documenting this recipe because this didn't involve any mixer grinder in order to achieve a decent gravy. The idea that I had, puree = good gravy changed, plus no extra masala powders are needed. However, Madhavi added garam masala today, but when I tried it personally without the garam masala, it was absolutely delicious as well. So, the recipe is the same for mutton or chicken and variations can be made with or without tomatoes by substituting it with curd. 



To make this recipe, you'll need : 

Chicken - 1kg 
Oil - 3 Tablespoons 
Bay leaves - 4 
Shah jeera - 1 1/2 teaspoons 
Cloves  - 3 
Green cardamom - 2 (optional)
Cinnamon - 2 small sticks
Onion - 2 medium 
Tomatoes - 2 to 3 medium 
Green chilli - 4 (slit)
Curry leaves - 1 sprig
Mint - a handful (optional)
Coriander - 1 bunch 
Ginger garlic paste - 1 Tablespoon 
Turmeric powder - 1/2 teaspoon 
Garam masala powder - 1/2 teaspoon 
Red chilli powder - 1 Tablespoon 
Salt - 2 1/2 teaspoons (or) to taste 

                                                     

Method :

 1. Add oil to the pot and let it get hot. 



2. To that add all the whole spices (bay leaves, shah jeera, cloves, green cardamom, cinnamon) and fry until they get swollen and change their color to a dark shade. 


3. Next add, sliced onions, curry leaves, and mint. 


4. Slit green chillies.


5. Give it a good mix. 


6. Once the onions get translucent, add ginger garlic paste and fry until its raw smell disappears.




7. Now, add turmeric and give it a good mix. 




8. Add the chicken and mix well to coat everything evenly and cook for 5 mins.



9. Add the salt and the garam masala, mix well, and continue to cook for another 5 mins. 



10. By this time water from the chicken gets a little released, now add the chili powder. Mix well.



10. Now, add the tomatoes, and coriander, give it a good mix, add 2 cups of water, and cook until chicken is done.




11. Check for taste, and add if anything is necessary. Remember, cooking is not just following a recipe but also monitoring it. So, keep an eye on your food to not overcook it or undercook it.
