To Make This Recipe, You'll Need:
Urad dal - 125g (I used the tiniest bowl available at home, measured 2 cups which gathers 125g)
Dried red chilli - 20-23 no's (20g)
Coriander seeds - 5 Tablespoons (30g)
Black pepper - 2 teaspoons
Methi seeds/ fenugreek - 1/2 teaspoon
Jeera/ cumin seeds - 3 teaspoons
Garlic cloves - 15 no's
Curry leaves - 1 bunch
Flax seeds - 100g (same measures as urad dal, 2 cups)
Salt - 2 1/2 teaspoons (or) to taste
Oil - 2 Tablespoons
Method :
1. To a pan add the oil, once the oil is hot, add the urad dal and fry it on low flame until it turns brown and aromatic.
2. Once the urad dal turns golden brown, add the red chilies and fry until they are coated well with the oil, slightly singed, and look shiny.
3. Add coriander seeds and continue to fry on a low flame until you can smell the aroma.
4. Add methi seeds
5. Black pepper goes next.
6. Next goes jeera.
7. Garlic cloves
8. Curry leaves
9. After every addition, keep mixing. Otherwise, the ingredients will burn.
10. Flax seeds. Continue to fry it on a low flame until you hear the spluttering. It is said that it's compulsory to roast or fry flaxseeds prior to eating as they can be toxic in their raw form. On the other hand, they will lose their wonderful properties if exposed to heat for a long period of time. So, monitor this and make a judgment.
11. Immediately add the salt, mix well, and turn off the stove.
12. Transfer it to a plate and let it cool.
13. Once it's cooled down completely. Grind to a fine powder and mix well. Store in an airtight container for daily use.
Ready to be served.
