Egg Pulao/ Anda Pulao/ Egg Rice/ Easy Egg Pulao

For me, this is a unique style of making a pulao! You will know why as you proceed to read this post. 
This pulao can be made plain as well, it tastes absolutely amazing. For a vegetarian version substitute eggs with vegetables or paneer, and vegans can replace it with soya chaap πŸ˜‹.



To Make This Recipe, You'll Need : 

For Pulao: 
Rice - 2 cups 
Water - 4 cups
Onions - 2 (medium-sized, roughly chopped)
Garlic pods - 10 - 15
Cumin seeds/ Jeera - 1/2 teaspoons 
Red chili powder - 3 Tablespoons (or) to taste
Salt - 2 1/2 teaspoons (or) to taste
Oil - 6 Tablespoons 

For Eggs: 
Boiled eggs - 3 (halved)
Onion - 1 (finely chopped)
Ginger garlic - 1/2 teaspoon
Red chili powder - 1/2 teaspoon (or) to taste
Salt - To taste
Curry leaves - 1 sprig
Coriander - few sprigs

Method :
 
Rice :
1. Wash the rice grains thoroughly and soak them in the water. 
2. In a blender jar add all the rest of the ingredients and grind it to a smooth paste. 
3. Add this paste to the soaked rice grains and cook until done. 


Eggs:
4. Now, for the eggs, add oil in a pan, add finely chopped onion, ginger garlic paste, curry leaves and saute until they start to brown. Add the boiled halved eggs, followed by red chilli powder and salt. Mix well and the eggs are done. 
5. Now arrange the rice on a serving dish and top it off with the prepared eggs and coriander. 
6. Serve with raita.
