This is my first time working with these amazing little spiny guys. I must say it tasted amazing and reminded me of kasarakayalu, a seasonal vegetable that's grown in Rayalaseema. Kasarakayalu tastes bitter and this spiny gourd doesn't. But these both vegetables have seeds and give a crunchy texture to the dish and this left me reminiscing about kasarakayalu.

Their ends are trimmed off and cooked using garlic, coconut, and onions and these are my parent's favorite. They take every possible chance to buy these whenever they go to Rayalaseema or ask others to get them on their return to Hyderabad. This year also, my family visited Rayalaseema and brought this along. I was sick, hence I couldn't make a blog post on this. My mom cooked and my family feasted on it...
Anyway, let's get back to the recipe. This recipe is so simple and easy and very tasty...
To make this recipe, you'll need :
Spine gourd
|
250 grams
|
Onion
|
1 no chopped
|
Mustard seeds
|
1/4th teaspoon
|
Jeera
|
1/4th teaspoon
|
Curry leaves
|
6 to 7 nos
|
Dried red chilli
|
1 no
|
Garlic
|
10 pods minced
|
Red chilli powder
|
1 – ½ teaspoons
|
Salt
|
To taste
|
Oil
|
1 ½ Tablespoons
|
Method :
1. As you know, the spiny gourd has little spikes and you need to wash and clean one by one rubbing and removing the dirt particles.
2. Cut the gourd as desired...
3. Add oil, after the oil is heated, add mustard, jeera, curry leaves, dried red chilies, fry for a minute or so to release the aromas and add the chopped onions and cook until they turn translucent.
4. Add minced garlic and cook for a minute. (on low flame)
5. Add the spine gourd and cook on a low flame until they are done.
6. Now, to crisp up, even more, increase the flame and mix again. Now add the red chili powder and salt, mix well and switch off the flame.
7. Spine gourd stir fry is ready and you can enjoy it with your rice and dal.
